These Sexy Veggie Tortilla Wraps are very easy to assemble and everyone can build their own.
Large Burrito Size Tortilla Shells
Tortilla Chips and Salsa or Guacamole
First begin by prepping your veggies.
Thoroughly rinse and spin dry the spinach, and be sure to drain all the liquid from the olives.
Slice the onions and tomatoes thinly so they can be easily folded within the tortilla.
This recipe is very versatile. You can use any vegetables that you prefer. Great additions to this combo are fresh white button mushrooms thinly sliced, avocado or guacamole, cilantro and turkey. I like to serve this wrap Tex-Mex style with chips and salsa.
Let’s get your shells and cheese ready to go into the oven.
Cover a large pizza pan with aluminum foil. This closes up the air hole vents so that your shells will not dry out.
Place the tortilla shells on the pan, overlapping each other.
Place the Swiss cheese on the outer edges of the shells so that the cheese will not melt your shells together.
Place the pan in a 350 degree oven just until the cheese melts. This step only takes a few minutes.
Once you remove the shells from the oven let them sit for a minute to cool just a bit before removing.
And now to put it all together!
Once you remove the shells from the oven and let them cool just a minute, remove them from the pan using a spatula onto your work prep area.
I improvise by lining my counter with aluminum foil and use that as my work space. I usually build 2-3 wraps at a time.
begin by spreading a generous amount of sour cream all over the shell. Yum…..
Then layer your veggies, using as much as you want of each.
Salt and pepper if you like, then get ready to roll!
Roll towards the cheese, so that it can act like a glue to hold your wrap together.
Once rolled up, slice on an angle.
Serve with chips and salsa or guacamole and an ice cold beer.
